Textured Christmas Collar Cake: Advanced Royal Icing
If you are already familiar with using royal icing, then this course will take you a step further to create an impressive collar for a Christmas cake.
You will start with a sugarpasted cake, and will then go on make a half collar for the side edge, using textured royal icing and pressure piping techniques.
Paddi will also show you how to do run-outs, brush embroidery and iced flowers including poinsettias, Christmas roses, leaves, grapes and vines.
The design will be incorporated onto the cake side and board for an impressive final result.

Mark will give you a brief history of chocolate and about the transition from bean to bar.
You will then get to work piping chocolate designs (such as 3D Christmas trees and stars), moulding snowmen and trees in Cocoform, piping chocolate into shapes using moulds and using transfer sheets to create amazing chocolate decorations.
Mark will also show you how to make chocolate Christmas baubles, chocolate cups, chocolate bars, frozen decorations and garnishes for chocolate desserts.
