Pineapple Upside Down Cupcakes

Sign up at Macmillan Cancer Support's Coffee Morning. A fun take on a classic treat, these cupcakes are sweet and simple. They are made entirely from scratch and only take 20 minutes to bake! .




  • Butter: 150g, softened
  • Icing sugar: 340g
  • Coconut extract: ¼tsp
  • Milk: 1-2 tbsp


  • Toasted desiccated coconut
  • Maraschino cherries: 12
  • Glitter (optional)


Making The Cupcakes:

  1. Preheat oven to 180˚C (350˚F/Gas Mark 4) and line a 12-hole cupcake tin with paper cases.
  2. Cut a piece out of each pineapple ring so they fit into the paper cases.
  3. Beat the butter and sugar together with an electric mixer until light and fluffy. Add the eggs, flour, bicarbonate of soda and vanilla and mix well. Add enough milk to loosen the mixture a little.
  4. Fill each paper case three-quarters full, then top with the pineapple ring. Scatter a little Demerara sugar onto each cupcake and bake for 20–25 minutes, or until a skewer comes out clean.
  5. Place the jam into a piping bag and cut off the tip. Once the cupcakes are cooled, poke a little hole into each cupcake with a skewer and pipe the cherry jam into the hole.


Decorating The Cupcakes:

  1. To make the buttercream, beat the butter and then add the icing sugar until smooth and light. Next, add the coconut extract and enough milk to loosen up the mixture.
  2. Fit a new piping bag with a round nozzle and the spoon in the buttercream. Now pipe a swirl on top of each cupcake.
  3. Roll each cupcake gently into some toasted coconut, then add another swirl of buttercream to the top of each one.
  4. If you want, you can now place the cherries into some edible glitter and shake off the excess. Top each cupcake with a cherry to finish!
