Sun Cupcakes

These fun and easy-to-make cupcakes would make a great centrepiece for a child’s party, and they’re just the right size for little hands.
For the cupcakes, you'll need:
  • Margarine: 125g (4½oz)
  • Caster sugar: 125g (4½oz)
  • Eggs:2, large
  • Self-raising flour: 125g (4½oz)

Making the cupcakes
  1. Preheat the oven to 170°C (340°F/Gas Mark 3). Then cream the margarine and sugar together until light and fluffy.
  2. Beat the eggs together in a small bowl with a fork. Gradually add the eggs to the creamed mixture, beating it well in between each addition.
  3. Sift the flour and fold it into the mixture with a spatula or metal spoon.
  4. Divide the mixture into the 12 cupcake cases. Bake in the preheated oven for 10–15 minutes.
  5. Remove the cupcakes from the oven and leave them to cool in the tin.
  1. Dust a non-stick surface with a little icing sugar. Roll out half of the Zesty Orange sugarpaste and cut out 12 x 4cm (1½”) circles.
  2. Create a mouth shape in each of the orange circles by gently pressing a drinking straw into the paste at an angle. Use a small piece of dried spaghetti to create dimples on each side of the mouth.
  3. Make 24 small balls from 10g (¼oz) of Bridal White sugarpaste. Slightly flatten each ball and attach in pairs to each circle of orange paste to form eyes. Secure in place with a little edible glue. Mark pupils in each of the white eyes using a black food colour pen.
  4. Spread some jam on the centre of each cupcake. Roll out the Sunshine Yellow, Glamour Red and remaining Zesty Organge sugarpaste and cut some flame shapes using a knife. Position and secure the flames around the edge of each cupcake by pressing them gently into the jam. Alternate the colours as you work around the edges, ensuring you leave a circle in the centre of the cupcake to place the sun’s face. Finally, place the circular faces into the centres of the cupcakes.
