Squires Kitchen CoKrystal B is powdered cocoa butter that can be used as an aid for tempering chocolate, keeping it fluid for longer. Thanks to its powder form, it is more accurate to measure and easy to use.

Squires Kitchen CoKrystal B can be used for frying to bring out the natural flavour of the ingredients, in even the most delicate of produce. Using cocoa butter in your dishes reduces the calories by 50-70%, compared to using other fats in cuisine.

Storage instructions
Store in a clean, dry, odourless environment at 12-20°C
Usage instructions
  1. To use for tempering chocolate, melt the chocolate in a microwave or bain-marie to 40°–45°C.
  2. Allow the chocolate to cool at room temperature to 34°–35°C for dark or 33°–34°C for milk, white or coloured chocolate.
  3. Add 1% of Co Krystal B (i.e. 10g per 1kg of chocolate) and mix well.
  4. When the chocolate reaches the ideal temperature of 31°–32°C for dark or 29°–30°C for milk, white or coloured, it is ready to use.
  5. Test the chocolate to ensure it is perfectly tempered. When the tip of a knife is dipped into the chocolate, it should set in 3–5 minutes.
