Making small, delicate pieces for sugar flowers or models can be fiddly if you’re using your fingers, so make things easier by using a mini straight palette knife.

Smaller than any other palette knife, this handy little tool is ideal for sliding under thin petals and leaves and for picking up tiny pieces of a sugar model. Unlike a small knife the blade is flexible so you won’t risk misshaping or stretching your work. The tip can also be used to cut rolled-out pastes, even on a non-stick board.

Sometimes known as a Kemper tool, the mini palette knife is used by professional sugarcrafters and featured in books by authors including Alan Dunn, Paddi Clark and Michelle Wibowo.

The 'must-have' tool for all cake decorators

Posted 5 months ago by

Haha ... as per Debbie's review above, this little tool is worth it's weight in gold. I also have 4/5 of these and use it all the time. Seriously, don't just buy one, buy a few ... you won't be disappointed ... and you will wonder how you ever lived without it :)

Couldn’t live without my mini palette knife

Posted 7 months ago by

My most used and prized cake decorating tool! I now have 4 as I would be devastated if I lost or broke mine.
This is far superior to the PME knife, it has a lovely wooden handle but is super light. The blade is ultra thin making it flexible (mine have become more flexible with use). I put mine in the dishwasher and my original knife is about 7 years old and still going strong.
It’s great for picking up thinly rolled sugarpaste ( shapes, flowers and letters), no more squidged edges trying to pick it up with your fingers. Add colour gel to sugarpaste. Neaten edges, use it as a knife and trim sugarpaste around the sides of cake drums... it has so many uses, fabulous bit of kit and money well spent.
