Squires Kitchen Choc Coating can be used for chocolates, confectionery, ganache, sauces and fillings to give them a fabulously fruity flavour.

You can even use Squires Kitchen Choc Coating straight from the pack as a quick cake decoration, as demonstrated by Delia Smith with the strawberry flavour on her Cheat's Chocolate Cake, shown on the front cover of Sainsbury's magazine.

If melting, this product requires tempering (for sauces, fillings and ganache, tempering is not required).

Ingredients

Sugar; Cocoa Butter (30%); Whole Milk Powder; Emulsifier: Soy Lecithin; Flavouring; Colour: E120; Natural Vanilla Flavouring

30% chocolate solids minimum.

Usage instructions
  1. How to Temper: These instructions are applicable for either a 300g or 1kg batch. There is no need to alter the method for different quantities.
  2. Take an appropriate sized, microwaveable bowl and pour in the required amount of coating. The bowl should be no more than 3/4 full.
  3. Heat in a microwave oven for 50 seconds on full power. Remove and stir well with a spatula. The buttons will still be quite solid at this stage.
  4. Return the bowl to the microwave for a further 40 seconds, remove and stir thoroughly again.
  5. Return the bowl to the microwave for 10 seconds, remove and stir well. Repeat this until 2/3 of the coating is melted.
  6. Continue to stir until all the buttons are melted. The coating should now be at a temperature of 30°C. Check the temperature with a chocolate thermometer, or dip the point of a small knife into the coating: if it sets in 3 to 5 minutes it is ready to use.
  7. Important: Always use dry utensils.
  8. Do not allow steam or water to get into the coating at any time.
